Zucchini bread

Ingredients

  • 3 eggs
  • 2 C sugar-(2 C Splenda works well)
  • 2 c grated zucchini
  • 3 t vanilla
  • 1 C oil
  • 2 c flour
  • 1/4 t baking powder
  • 2 t soda
  • 2 t cinnamon
  • 1/2 t salt
  • 1/4-1/3 C sour cream-especially if using splenda
  • 1 C nuts
  • 1 C softened raisins

Directions

  1. Beat eggs sugar, zucchini, oil and vanilla together

  2. Add dry ingredients

  3. Add nuts and raisins

  4. Pour into 2 greased loaf pans

  5. Bake 350 for 40 minutes in glass and 45 minutes in aluminum
