Chickenpot Pie

Ingredients

  • 1/3 C butter
  • 1/3 C chopped onion
  • 1/3 C flour
  • 1/2 t salt
  • 1/4 t pepper
  • dash celery seed
  • 1 3/4 C chicken broth
  • 2/3 C milk
  • 2 C chopped cooked chicken
  • peas and carrots (can use pkg frozen vege)
  • potatoes, cooked and diced
  • 1 pkg- 2 crusts-uncooked
  • Pillsbury or Publix ready made crust rolled and 2 per package work great

Directions

  1. Preheat oven to Bake 425 for 30 minutes-takes longer to cook top and bottom crusts

  2. Saute onion, flour, salt and pepper in melted butter- about 5 min

  3. Remove from heat and pour chicken broth and milk and bring mixture to a boil and cook until thickens

  4. Remove from heat and add chicken, vegetables into broth mixture

  5. Crust on bottom, add broth, chicken mixture and top with second crust,

  6. Cut slits in crust

  7. Let cool 5 minutes
