Ginger Cookies/Wedel/Orange buttercream filling

Ingredients

  • Cream together:
  • 1 C sugar
  • 3/4 C butter
  • 1 egg
  • 1/4 C molasses
  • Sift and add
  • 2 t soda
  • 1 t cinnamon
  • 1 t ginger
  • 2 C flour
  • 1/4 t cloves
  • Filling
  • 1 stick unsalted soft butter
  • 1 tsp orange zest
  • 2 C confectioner sugar
  • 1 T heavy cream

Directions

  1. Add dry ingredients to creamed mixture

  2. Chill

  3. Bake on greased tin, making cookies walnut size and ROLLING IN GRANULATED SUGAR

  4. Bake 375 for 8-10 minutes

  5. Crushed they make a wonderful crust- just add softened butter

  6. Orange Buttercream filling:

  7. Beat butter on medium speed

  8. Add orange zest

  9. Add confectioner sugar

  10. Add 1 T heavy cream

  11. Fill 2 cookies with small amount butter cream filling
