Lasagna with ground beef, turkey & zucchini

Ingredients

  • extra-virgin olive oil
  • 1 small onion
  • 1/2 teaspoon red pepper flakes
  • 1+ pound ground turkey
  • 1+ pound ground beef
  • 1/2 cup chopped onion
  • 1-1/2-2 teaspoons of minced garlic
  • 4~ cups of Marinara sauce
  • 15oz ricotta cheese
  • 1 egg
  • 1 tbsp parsley
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1-2 zucchini
  • 1-2 cups of shredded mozzarella cheese
  • 3/4 cup grated or shredded Parmesan cheese

Directions

  1. 1)Cook lasagna noodles per package (al-dente) directions adding 1/2 tsp salt and 1 tbs olive oil to keep from sticking, drain and lay flat on oiled baking sheet or aluminum foil.

  2. 2) Brown ground turkey and beef with chopped onion and minced garlic

  3. 3) Stir in marinara sauce and simmer for 10-15 minutes

  4. 4) Beat egg, add ricotta cheese, parsley, salt, pepper & 1/2 cup of Parmesan cheese

  5. 5) Saute zucchini if desired

  6. 6) Coat large 9×13 casserole pan with cooking spray. Coat bottom with small amount of meat sauce

  7. 7) Arrange 1/2 the noodles (5-6) and then proceed to layer half ricotta cheese mixture, 1/2 mozzarella cheese, 1/2 Parmesan cheese, 1/2 meat sauce, 1/2 zucchini, repeat. Top off with mozzarella & Parmesan cheese.

  8. 8) Bake at 375 for 40-60 minutes or until cheese mixture is thoroughly melted. (Cover for first 40 minutes, then uncover)

  9. 9) Let sit for 10-1=20 minutes before cutting and serving.
