Sweet Potatoes

Ingredients

  • 3 lb. sweet potatoes, peeled and cubed
  • 1 cup low-fat vanilla yogurt
  • 1/4 cup honey
  • 1 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 Tbsp. brown sugar
  • 1 cup pecans

Directions

  1. Preheat oven to 350 degrees. Boil potatoes until tender, then drain.

  2. After the potatoes have cooled, mix in honey, yogurt, cinnamon, nutmeg, salt and brown sugar.

  3. Mix until smooth then spread into baking dish.

  4. Bake until hot or edges start to brown, roughly 30 minutes. Add pecans during the last 10 minutes of cooking or once dish is out of the oven.
