Apple- Crumb Stuffed Pork Chops

Ingredients

  • 4 (1-inch-thick) pork chops, cut with pockets
  • Salt and pepper to taste
  • 1 Tbsp. butter or margarine
  • 3 Tbsp. water
  • Apple- Crumb Stuffing:
  • 1 cup soft breadcrumbs
  • 1/2 cup diced apple
  • 3 Tbsp. minced onion
  • 3 Tbsp. raisins, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • Pinch of pepper
  • Pinch of ground sage
  • 1 1/2 Tbsp. butter or margarine, melted

Directions

  1. Stuff pockets of pork chops with Apple- Crumb Stuffing, and secure with wooden picks. Sprinkle pork chops with salt and pepper.

  2. Melt butter in a large, heavy skillet; brown pork chops on both sides. Add water; reduce heat. Cover and simmer 50 to 55 minutes or until pork chops are tender.

  3. Combine all ingredients; mix well.

  4. makes about 1 3/4 cups
