Apple- Glazed Lamb Chops

  • 4 (6 oz. each) lean lamb rib chops
  • 1/4 cup unsweetened apple juice
  • 3 Tbsp. ight brown sugar, packed
  • 1/8 tsp. dry mustard


  1. Trim fat from lamb rib chops; set aside.

  2. Combine apple juice, brown sugar and dry mustard in a large zip-close plastic bag; add chops and marinate in refrigerator 2 hours. Turn bag occasionally.

  3. Heat broiler; remove chops from bag; reserve marinade. Place chops on broiler rack coated with cooking spray and then in broiler pan. Broil 5 to 6 inches from heat for 9 minutes per side or to desired doneness, basting frequently with marinade; discard any leftover marinade.
