Pecan Pie Muffins

Ingredients

  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans
  • 2/3 cup, butter, melted
  • 2 eggs, lightly beaten

Directions

  1. Preheat oven to 350 degrees. Grease and flour mini muffin tins.

  2. In a large bowl, combine sugar, flour and pecans. Set aside.

  3. Combine butter and eggs. Add to sugar mixture.

  4. Fill prepared muffin tins about 2/3 full. Bake 22 to 25 minutes or until toothpick inserted in center comes out clean. Immediately remove from pans to wire rack to cool.

  5. makes about 2 1/2 dozen
