Apple Lamb Casserole

Ingredients

  • 1 lb. cubed lamb
  • 1/3 cup flour
  • 2 Tbsp. shortening
  • 2 cups water
  • 1 large bay leaf
  • 1 tsp. salt
  • 1 tsp. parsley flakes
  • 1 can buttermilk biscuits
  • 1/2 tsp. thyme
  • 1/4 to 1/2 tsp. curry powder
  • 1/8 tsp. pepper
  • 1 small whole onion
  • 1 lb. 4 oz. can sliced pie apples
  • 2 Tbsp. sugar

Directions

  1. Coat lamb with flour. Brown in shortening in large skillet. Stir in water, bay leaf, salt, parsley, flakes, thyme, curry powder, pepper and onion. cover and simmer 1 hour until meat is tender, stirring occasionally.

  2. Remove onion and bay leaf, stir in apples and sugar. Bring to a boil.

  3. Turn into 8- 9-inch square baking dish. Open biscuits; separate dough into individual biscuits. Place around edge of baking dish.

  4. Bake at 225 degrees for 15 to 18 minutes.
