Apple Matzo Kugel

Ingredients

  • 3 matzoth (thin flat breads used for Passover)
  • 4 Tbsp. poultry fat (or vegetable fat)
  • 5 eggs, separated
  • 1 cup matzo meal
  • 1/3 cup almonds, chopped
  • Grated rind of 1 lemon
  • 1/2 tsp. salt
  • 1 large-size apple, grated
  • Wine Sauce:
  • 1/3 cup sugar
  • 4 eggs
  • 1/4 tsp. cinnamon
  • 1 cup sweet wine

Directions

  1. Dip matzoth in cold water, merely to moisten, then press dry.

  2. Melt half the fat in a frying pan and pan-fry the matzoth over low heat until quite dry.

  3. Beat egg yolks until thick and lemon colored; add matzo meal, then fried matzoth. Mix lightly but well. Add almonds, lemon rind, salt and grated apple.

  4. Beat egg whites until stiff but not dry; fold into mixture. Pour into greased 2 quart baking dish; dot with remaining fat.

  5. Bake in 350 degree oven for 35 to 40 minutes, or until fluffy light and delicately browned. Serve with wine sauce.

  6. Wine Sauce:

  7. Place egg yolks in a deep, but not too large, bowl that will fit over a pan of water. Beat until the yolks are richly thick; then gradually beat in the sugar mixed with the cinnamon. Place the bowl over hot, not boiling, water and beat as the wine is slowly poured in. Continue to beat until the sauce stands up high and fluffy.
