Mexican Caviar

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tsp salt
  • 1/8 tsp Tabasco
  • 2 16-oz cans black beans - drained
  • 2 11-14-oz cans “Mexican” corn
  • 1/2 cup green onion, chopped
  • 1 large tomato - diced
  • 1 avocado - diced

Directions

  1. Mix oil, vinegar, etc with beans, corn, and onion. Refrigerate for 4-6 hours. Before serving, add tomatoes and avocados.
