Applesauce Cake

Ingredients

  • 8 Tbsp. (1 trick) unsalted butter, at room temperature
  • 1 cup sugar
  • 1 large egg, at room temperature
  • 1/2 tsp. baking soda
  • 1 cup thick applesauce
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup thick applesauce
  • 1 tsp. cinnamon
  • 2 cups all-purpose flour

  • 1/4 tsp. nutmeg
  • 1 tsp. baking powder

  • 1/2 cup raisins
  • 1 tsp. cinnamon

  • 1/2 cup raisins
  • Glaze:
  • 6 Tbsp. fresh lemon juice
  • 2 cups confectioners' sugar

Directions

  1. Preheat oven to 350 degrees. Butter a 9 × 5-inch loaf pan, line bottom with parchment and butter paper.

  2. Beat butter and sugar with an electric mixer until light and fluffy. Beat in egg. Stir baking soda into applesauce.

  4. Mix dry ingredients, then add to butter mixture in 3 additions, alternately with applesauce. Stir in raisins.

  5. Pour into pan and bake until top springs back when pressed, 50 minutes. Cool in pan on a wire rack for 10 minutes, then turn out onto rack.

  7. Make glaze: Mix lemon juice and confectioners’ sugar. Spoon glaze over cake.

  8. Mix dry ingredients, then add to butter mixture in 3 additions, alternately with applesauce. Stir in raisins.
