Spicy Turkey Chili

Ingredients

  • 1 tbsp. canola oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, minced
  • 1 tbsp. tomato paste
  • 1 tbsp. chili powder
  • 2 tsp. ground cumin
  • 1 lb. ground turkey
  • 1 15-oz. can black beans, rinsed
  • 1 28-oz. can diced tomatoes
  • 4 c. low-sodium chicken broth

Directions

  1. In a large stockpot, heat oil over medium-high heat. Cook onion until tender and golden, 8 minutes. Add garlic and jalapeño and cook until fragrant, 2 minutes more. Add tomato paste, chili powder, and cumin and cook, stirring, 1 minute more.
  2. Add turkey and cook, stirring, until cooked through and golden, 5 to 7 minutes. Add black beans and canned tomatoes, stirring to combine, then add broth.
  3. Increase heat to a simmer and let cook, 25 minutes.
  4. Serve in bowls and garnish with scallions and cheddar.
