Green Beans

Ingredients

  • 2 1/3 # green beans
  • 3/4 # bacon-cooked-cut into small pieces
  • 1 1/2 diced shallots
  • 1 1/2 T pine nuts
  • Fresh parsley to garnish
  • Dressing:
  • 1 1/2 T grainy mustard
  • Pinch salt
  • 1 1/2 T hot water
  • Add: for dressing for beans
  • 1 1/2 t lemons juice
  • salt/pepper
  • 1/2 C canola oil

Directions

  1. Steam beans for about 8 minutes and shock in cold water

  2. Cook shallots in 1 1/2 T butter

  3. Add nuts- cook about 1 more minute

  4. Mix dressing

  5. Layer:beans, fresh parsley

  6. Shallot and nut mixture

  7. Bacon

  8. Dressing
