Collards/Kale

Ingredients

  • Collards or kale- washed and stem removed
  • Meat of ham, smoked turkey wings or bacon
  • Diced onion
  • Garlic clove diced
  • Add:
  • 3 C beef or chicken broth
  • kale
  • Drizzle with olive oil
  • Sherry

Directions

  1. If using smoked turkey, cook in broth for about 1 hour, or until meat falls off bone

  2. In a pan saute onion- then for 20 seconds, add garlic

  3. Add greens, sherry, remainder of broth, olive oil to greens and meat

  4. Cook until greens are to desired tenderness using lid
