Chicken Chow Mein

Ingredients

  • 2 celery ribs, chopped
  • 1 medium onion, chopped
  • carrots
  • 1 T soy sauce
  • 1 can cr. of mushroom soup
  • 1/2 c. chicken broth
  • 3 cup cubed cooked chicken
  • 1/2 c. sliced fresh mushrooms
  • 1 can chow mein noodles
  • 1/3 c salted cashews

Directions

  1. In a saucepan, saute celery and onion in butter until tender.

  2. Stir in soup, broth, and soy sauce

  3. Add chicken and mushrooms, heat through

  4. Transfer to a 2 qt. baking dish, greased.

  5. sprinkle with chow mein noodles and cashews.

  6. Bake uncovered at 350 degrees for 15-20 min or until heated through

  7. Can be made ahead and then add newedles and cashews before baking

  8. 2-3 recipes can be put in a 9×13 pan
