Buttery Cornbread

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup cornmeal
  • 2 T. sugar
  • 1 T. baking powder
  • 1/2 t. salt
  • 1 large egg, lightly beaten
  • 3/4 cup milk
  • 1/2 cup butter, melted
  • 2 T. oil

Directions

  1. eheat oven to 425. Place the 2 T. oil in the skillet and allow it to heat along with the oven.

  2. Combine first 5 ingredients in a large bowl. Comine egg, milk, and 1/2 cup melted butter; stir with a wire whisk. Add egg mixture to dry ingredients, stirring just until dry ingredients are moistened.

  3. Pour batter into prepared pan. Bake 20-25 minutes or until a wooden pick inserted in center comes out clean.
