tomato and chickpea salad

nobody should need a recipe for salad. i’m just adding it here because i want to use this site as a tool for meal planning.

Ingredients

  • 2 tomatoes, minced or sliced
  • 1/2 cup chickpeas, cooked
  • 1/4 onion, minced
  • olive oil
  • salt
  • pepper

Directions

  1. just mix everything. period. sometimes i add some canned corn to it. this is great for lunch, quick, healthy and filling.
