Albondigas Soup (Mexican Meatball Soup)

Ingredients

  • 1 Tbsp. oil
  • 1 clove garlic, minced
  • 2 beef bouillon cubes
  • 3 Tbsp. fine soft bread crumbs
  • 1 tsp. salt
  • Parsley (optional)
  • 2 Tbsp. minced onion
  • 1 can (8 oz.) tomato sauce
  • 4 cups water
  • 1/2 lb. ground beef
  • 2 Tbsp. rice
  • 1 egg
  • Freshly ground pepper

Directions

  1. In a large saucepan heat oil and saute onion and garlic until golden brown. Add tomato sauce, water and bouillon cubes and heat to boiling.

  2. Meanwhile, combine beef, bread crumbs, rice, egg, 1/2 tsp. salt and pepper to taste. Shape in 1 inch meatballs (make 18-20). Carefully drop into simmering soup, cover and cook over low heat 25 minutes. Season with remaining 1/2 tsp. salt and pepper to taste. Garnish with parsley.
