Almond Beef Rolls

Ingredients

  • 3/4 cup almonds, diced and roasted
  • 1 1/4 cups soft bread crumbs
  • 1 Tbsp. grated onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 lb. ground beef
  • 2 Tbsp. shortening
  • 2 Tbsp. flour

Directions

  1. Mix 1/2 cup almonds with 3/4 cup crumbs, onion, 1/4 tsp. salt and pepper.

  2. Combine ground beef, remaining salt, crumbs and 1/4 cup milk. Divide meat mixture into 8 parts and press each into a rectangle 1/4 inch thick. Place a spoonful of stuffing on each. Pinch together short sides of rectangle.

  3. Bake in flat greased pan in moderate oven (350 degrees) for 25 to 30 minutes. Remove beef rolls and blend meat drippings with flour and remaining milk. Cook, stirring, until thick and smooth. Serve sauce over beef rolls, top with remaining almonds.

  4. Allow 2 rolls per serving.
