Chili con Queso

Ingredients

  • 1 medium onion, chopped
  • 1-2 garlic cloves, minced
  • 2 tbsp butter
  • 4 oz can chopped green chilies
  • 2 tbsp cornstarch
  • 1 cup whole milk
  • 2 1/2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack
  • Tortilla chips
  • Tomato and jalapeno pepper

Directions

  1. Saute onion and garlic in butter. Add chilies; cook and stir 5 minutes. Whisk cornstarch and milk; stir into pan. Bring to a boil; stir 1-2 minutes.

  2. Reduce heat to low; stir in cheese, adding in small amounts and allowing cheese to melt between additions.
