Homemade Thai Sweet Chili Sauce

(from castro15’s recipe box)

Categories: Dressing/Sauces

Ingredients

  • 2 fresh long red chilli peppers
  • 2 garlic cloves, minced
  • 1 teaspoon fresh grated ginger
  • 1/2 cup water
  • 1/2 cup white wine vinegar
  • 1/2 cup mild honey
  • 1/2 teaspoon salt

Directions

  1. Cut the chilli peppers in half and deseed them, except for 1/2 pepper. Chop all coarsely and place in a food processor or chopper.

  2. Add minced garlic and grated ginger together with water and pulse a few times.

  3. Add mixture into a small saucepan and add vinegar, honey and water. Stir and bring to a boil on high heat.

  4. Then lower to medium-low and simmer until the sauce thickens. This takes about 20 minutes. Stir occasionally to keep sauce from sticking to the bottom of the pan.

  5. Fill finished sauce into a clean container with a lid to store (in the fridge).
