Tiny Tomato Tarts

Ingredients

  • One thawed package of puffed pastry
  • 3 tablespoons pesto
  • 4 roma tomatos, sliced
  • Olive oil

Directions

  1. Preheat oven to 400 degrees.

  2. Line two baking sheets with parchment paper.

  3. On a lightly floured work surface, unfold the puff pastry.

  4. Using 2 1/2" cookie cutter, cut out circles.

  5. Place the circles on baking sheets.

  6. Using fork dock all pastry circles.

  7. Spread one teaspoon of pesto onto each circle.

  8. Place a slice of tomato on top.

  9. Drizzle with olive oil.

  10. Bake until golden brown, about 15 to 20 minutes.
