Salt-and-Vinegar Fingerlings

Ingredients

  • 3 lbs. fingerling potatoes, halved lengthwise
  • 1 1/2 cups white vinegar
  • 3 tbsp. peanut oil
  • 1 1/2 tsp kosher salt
  • Sea salt

Directions

  1. Cook potatoes in a large pot of salted boiling water mixed with vinegar until just tender, 20 minutes. Drain; toss with peanut oil and kosher salt.

  2. Roast at 500 until golden, 20 minutes. Top with sea salt.
