Grilled Cheese Grilled Sandwich

Ingredients

  • 1/4 stick unsalted butter, at room temp
  • 4 hearty country bread slices
  • 3 oz. grated sharp Cheddar
  • 3 oz. grated Gruyere
  • 1 tsp dry mustard powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper

Directions

  1. Butter both sides of the bread. Combine the cheddar, gruyere, mustard, paprika and pepper in a small bowl.

  2. Fold a 24-inch long piece of foil in half, short end to short end. Fold the sides up, forming a tray. Spritz the tray with a small amount of vegetable oil, then repeat with another piece of foil.

  3. Divide the cheese mixture evenly between the two trays and set aside.

  4. Set the cheese-filled trays on the grill over indirect heat. Cook for 6-9 minutes, until the cheese melts and bubbles around the edges.

  5. Grill the bread for 1-2 minutes per side over direct heat.

  6. Place 1 slice of bread on another piece of foil. Open one end of the cheese tray slide the cheese onto 1 slice of bread. Top with a second slice, then fold the foil around the sandwich.

  7. Repeat with remaining cheese and bread and return the sandwich packets to the grill over indirect heat for 1-2 minutes.
