Ingredients

  • 1 3/4 c. all purpose flour
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/3 c. butter or margarine
  • 1 c. cheddar cheese
  • 3/4 c. milk
  • Cooking oil

Directions

  1. Preheat oven to 425oF.

  2. Mix flour with baking powder and salt.

  3. Cut in butter (with pastry cutter or fork).

  4. Add 1 c. cheese and toss with flour mixture.

  5. Add milk and stir quickly (with a fork)

  6. until flour is incorporated.

  7. Pour about 2 Tb. of cooking oil onto a cookie sheet.

  8. Spread oil to cover pan with ONE hand. (I use my left hand.)

  9. Scoop up a forkful of biscuit dough.

  10. Slide dough off onto cookie sheet with oiled (left) hand.

  11. Flip dough ball over with that (left) hand

  12. (so both sides of dough are now oiled).

  13. Pat dough into semblance of a biscuit shape.

  14. (Just a pat or two on top and “squoosh” the sides; do NOT work the dough).

  15. Bake at 425oF for 10 to 15 minutes until tops are light brown.

  16. Keep an eye on these;

  17. the cheese biscuits tend to burn more easily than regular.
