Amazin’ Raisin Cake

Ingredients

  • 3 cups all-purpose flour, unsifted
  • 2 cups granulated sugar
  • 1 cup mayonnaise
  • 1/3 cup milk
  • 2 eggs
  • 2 tsp. baking soda
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1/4 tsp. ground cloves
  • 3 cups apples, peeled, cored, chopped
  • 1 cup seedless raisins
  • 1/2 cup coarsely chopped walnuts
  • Cream Cheese Frosting OR 2 cups whipped cream:
  • 1 box (4 cups) confectioners' sugar
  • 1 (8oz.) pkg. cream cheese
  • 3/4 stick margarine

Directions

  1. Grease and flour 2 (9-inch) round baking pans.

  2. In a large bowl, with mixer at low speed, beat flour, sugar, mayonnaise, milk, eggs, baking soda, cinnamon, nutmeg, salt and cloves for 2 minutes, scraping bowl frequently. Batter will be very thick.

  3. With heavy wooden spoon, stir in apples, raisins and walnuts.

  4. Spoon batter into prepared pans. Bake at 350 degrees for 45 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans and cool completely. Spread with Cream Cheese Frosting or whipped cream.

  6. In a large bowl, mix all ingredients until smooth and spread on cool cake.
