Biscotti/chocolate, cherry, cornmeal

Ingredients

  • 1 1/2 C unbleached, all purpose flour
  • 1/2 C cornmeal
  • 3/4 C sugar
  • 1 t baking powder
  • 1/4 t salt
  • 2 eggs, room temperature
  • 1 t vanilla extract
  • 4 T unsalted butter
  • 1/2 C dried cherries, coarsely chopped
  • 1/2 C salted macadamia nuts, coarsely chopped
  • 7 1/2 oz white chocolate chips-1/2 C coarsely chopped and remainder to frost cooked biscotti-might need more to frost biscotti?

Directions

  1. Blend flour, cornmeal, sugar, baking powder, salt

  2. In mixing bowl beat eggs, vanilla and butter and beat on medium speed slightly

  3. Add flour mixture in increments

  4. Fold in chopped cherries and macadamia nuts and 1/2 C of coarsely chopped white chocolate chips

  5. Using 2 loaf pans, lightly greased and bottom lined with parchment paper, divide dough

  6. Bake 350 degrees for until golden brown- about 30 minutes

  7. Remove, let cool about 15 minutes and transfer to rack for another 20 or so minutes

  8. Put oven down to 300 degrees

  9. Slice biscotti about 1/2 inch wide and place on baking sheet

  10. Bake 25 min until golden brown

  11. Cool on rack

  12. Frosting:

  13. Melt enough white chocolate in coffee cup in microwave- need to frost about 24 biscotti.

  14. When frosted. place biscotti on rack for chocolate to set
