Sour Cream Potatoes (Funeral Potatoes)

  • 5-6 Large potatoes (can also use tater tots)
  • 1 can cream of chicken soup
  • 1/4 c butter
  • 1 c sour cream
  • 3 tbsp. chopped onion
  • 1 c grated cheese
  • 2 tbsp. butter, melted
  • 3 large handfuls crushed cornflakes (opt)


  1. Cook potatoes, peel and cut into small pieces. combine soup and butter in glass bowl. microwave 1 1/2 minutes or until butter melts. Add onions and sour cream. Stir together with potatoes. place in large glass container. Top with grated cheese. Pat on cornflake crumbs that have been combined with 2 tbsp. melted butter and sprinkle on top. Cook until heated through or bake 25-30 minutes at 350 degrees.
