Fudge nut Bars

Luscious fudge filling bakes between two layers of cookie mixture.

Ingredients

  • 1 c butter
  • 2 c light brown sugar, firmly packed
  • 2 eggs
  • 2 tsp vanilla
  • 2 1/2 c flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 c quick cooking oats
  • 1 12 oz semisweet chocolate chips
  • 1 c sweetened condensed milk
  • 2 tbsp. butter
  • 1/2 salt
  • 1 c chopped nuts
  • 2 tsp vanilla

Directions

  1. Cream together 1 c butter and sugar. Mix in eggs and 2 tsp vanilla.

  2. Sift together flour, soda, and 1 tsp salt. Stir in rolled oats. Add dry ingredients to creamed mixture. Set aside while you make filling.

  3. In sauce pan over boiling water or in microwave, mix together chocolate pieces, sweetened condensed milk, 2 tbsp. butter and 1/2 tsp salt. Stir until chocolate pieces are melted and mixture is smooth. Remove from heat, stir in 2 tsp vanilla.

  4. Spread about two thirds of the cookie dough on bottom of greased 15 1/2x 10 1/2x 1" jelly roll pan. Cover with fudge filling. Dot with remaining cookie dough and swirl over fudge filling.

  5. Bake in moderate oven 350 degrees 25-30 minutes, or until lightly browned. Cut in small bars 2×1″. Cool
