Andouille Pigs in a Blanket

Ingredients

  • 2 cups self-rising flour
  • 2 tsp. sugar
  • 3 Tbsp. lard or shortening, chilled
  • 1 cup buttermilk
  • 1/2 lb. andouille sausage
  • 1 egg, beaten

Directions

  1. Heat oven to 400 degrees.

  2. Whisk flour and sugar; cut lard or shortening with a fork until thoroughly mixed. Blend in buttermilk with fork until dough forms.

  3. Put dough on floured surface and knead until smooth. Roll dough 3/8 inch thick. Cut into 2-inch squares; cut squares diagonally. Cut sausage into 1-inch pieces; quarter each piece lengthwise. Place sausage piece on wide end of dough triangle and roll. Seal pointed end with egg. Brush tops with egg and bake 12 minutes.
