Angel Food Cake with Roasted Pecans and Grand Marnier Syrup

Ingredients

  • 5 Tbsp. (3/4 stick) butter or margarine
  • 1 cup unsalted pecan hales
  • 1/2 cup sugar
  • 1/4 cup orange juice
  • 1/4 cup Grand Marnier or other orange-flavored liqueur
  • 1 tsp. grated orange peel
  • 1 prepared angel food cake (10 oz. or larger)

Directions

  1. Melt 1 Tbsp. of the butter in a small saucepan over low heat. Add the pecans; cp0pk until golden and the nuts release their aroma. Put the toasted nuts in s small bowl, and set aside to cool.

  2. Wipe the saucepan clean with a paper towel. Add the remaining 4 Tbsp. of butter to the saucepan and melt it over medium-high heat. Stir in the sugar and orange juice. Heat to boiling. Reduce heat to low and simmer, uncovered, 5 minutes. Remove saucepan from heat and stir in Grand Marnier and orange peel.

  3. Arrange the pecans on top of the cake. Slowly spoon the syrup over the top and sides of the cake, allowing it to be absorbed.
