Sweet Potato Gratin Casserole

Ingredients

  • 3 pounds sweet potatoes
  • 1/2 C butter- divided
  • 1/4 C plus 2 T light brown sugar, packed
  • 2 eggs
  • 2/3 C orange juice
  • 2 t cinnamon, divided
  • 1/2 t salt
  • 1/4 t nutmeg
  • 1/3 Call purpose flour
  • 1/4 C uncooked old fashion oats
  • 1/3 C chopped pecans or walnuts

Directions

  1. Bake sweet potatoes-let stand 5 minutes then

  2. Cut lengthwise and remove pulp into large bowl

  3. Beat 1/4 C butter and 2 T sugar into sweet potatoes

  4. Beat in eggs, orange juice, 1 1/2 t cinnamon,salt and nutmeg-Beat until smooth

  5. Pour into 1 1/2 quart greased casserole

  6. TOPPING;

  7. Combine flour, oats, remaining sugar and 1/2 t cinnamon in a medium bowl

  8. Cut in remaining 1/4 C butter with pastry blender or 2 knives

  9. Stir in nuts

  10. Sprinkle topping over sweet potatoes

  11. Bake 350 degrees for 25-30 minutes or until potatoes are heated through.

  12. Sweet potato gratin can be covered and refrigerated up to 1 day. Let stand at room temp for 1 hour before baking if it was refrigerated
