Barbecue-Marinated Pork Kabobs

Ingredients

  • 1 cup ketchup
  • 1/4 cup light brown sugar
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. Worcestershire
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 tsp crushed red pepper
  • 3 lbs. boneless country-style pork ribs, trimmed and cut into 2-inch pieces
  • Wooden skewers, soaked in water for 30 minutes

Directions

  1. In a medium bowl, whisk together ketchup, brown sugar, vinegar, Worcestershire, onion powder, garlic powder, garlic powder, black pepper and red pepper. Reserve 1/2 cup marinade for serving.

  2. Place pork in a large Ziploc bag; pour remaining ketchup mixture over pork. Seal bag; refrigerate for at least 8 hours.

  3. Remove pork from bag; discard marinade. Let stand at room temp for at least 30 minutes.

  4. Preheat grill to medium-high heat. Thread pork onto skewers.

  5. Grill over indirect heat, turning occasionally, until meat is cooked through, 20-25 minutes. Serve with reserved 1/2 cup marinade.
