Cacio e Pepe Fries

Ingredients

  • 1 lb. frozen potato wedges
  • 8 oz. fresh ricotta
  • 4 oz. cream cheese
  • 1/4 cup grated Parmesan
  • 1/4 cup grated Pecorino
  • 1 tbsp. olive oil
  • 2 tsp black pepper

Directions

  1. Bake fries as directed. Puree ricotta, cream cheese, Parmesan, Pecorino, olive oil and pepper in a food processor; spread in a large ramekin and top with more Parmesan and olive oil. Bake at 400 until hot, about 18 minutes. Toss the warm fries with Parmesan, Pecorino and pepper. Serve with the baked ricotta.
