Buttermilk Blueberry Scookies

Ingredients

  • 2 cups flour
  • 1/2 cup plus 1 tbsp. sugar, divided
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup cold butter, cubed
  • 1/2 cup buttermilk
  • 1 large egg, lightly beaten
  • 1 cup fresh or frozen blueberries, thawed

Directions

  1. Preheat oven to 375. In a bowl, whisk flour, 1/2 cup sugar, baking powder and baking soda. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk buttermilk and egg; stir into crumb mixture just until moistened.

  2. Drop dough by 1/4 cupfuls 2 in. apart onto a parchment paper-lined baking sheet. Form a 1/2-in.-deep indentation in center of each with the back of a spoon coated with cooking spray. Press berries into indentations; sprinkle with remaining sugar.

  3. Bake 11-14 minutes or until golden brown. Serve warm.
