Ambosia Parfaits

Ingredients

  • 1 (8 oz.) can mandarin orange segments, drained
  • 1/4 cup chopped, toasted blanched almonds
  • 2 cups prepared whipped topping
  • 1 pkg. instant toasted coconut pudding
  • 2 cups cold milk mint sprigs

Directions

  1. Reserve 5 orange segments for garnish. Fold oranges and almonds into topping.

  2. Combine pudding with milk, beating slowly for 2 minutes.

  3. Alternate topping and pudding in parfait glasses. Garnish with oranges
