Apple and Cheddar Cake

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 8 Tbsp. milk
  • 1 cup grated extra sharp or aged cheddar cheese
  • 1 sweet apple, such as a Gala, peeled, cored and diced

Directions

  1. Heat oven to 350 degree. line the bottom of a 9-inch round cake pam with parchment paper and generously coat the paper and insides of cake pan with butter and dust with flour.

  2. Combine flour, cornmeal, baking powder and salt in a medium bowl.

  3. In a large mixing bowl, combine the butter and sugar and beat with electric mixer on medium-high speed until fluffy, about 3 minutes, scraping down the sides of the owl once or twice as necessary. With mixer on medium-low; add eggs, one at a time, scraping down sides of the bowl after each addition. Add half of the flour mixture and mix well. Stir in the milk, then stir in the remaining flour mixture until just combined. Stir I’m the cheddar cheese and diced apple.

  4. Transfer batter to the prepared pan and smooth the top with a rubber spatula. Bake until the cake is golden brown and a wooden pick inserted near the center comes out clean, about 35 minutes. Let the cake cool in the pan for about 10 minutes, invert it onto a wire rack, and then turn it right-side up on a rack to cool completely. Slice and serve.
