Apple Fool

Ingredients

  • 2 cups sugar
  • 2 strips lemon zest
  • 6 golden Delicious apples, peeled, cored, and sliced
  • 1 cup heavy cream
  • 1 1/2 Tbsp. sugar
  • 2 Tbsp. apricot brandy

Directions

  1. Combine the sugar, 3 cups water, and lemon zest in a large heavy saucepan. Bring to a boil over high heat, stirring until the sugar dissolves. Reduce heat to ,medium-low, cover, and simmer the syrup 5 minutes.

  2. Add the apples, cover, and simmer 15 minutes, or until the apples are tender. Drain the apples (store syrup covered, in the refrigerator, for another use).

  3. Puree the apples through a food mill into a large bowl, cover, and chill thoroughly.

  4. Whip the cream in a chilled bowl with the sugar and apricot brandy until it holds soft peaks. Fold in the apple puree. Spoon the apple fool into chilled parfait or sherbet glasses.
