Apples Jubilee

Ingredients

  • 2 apples, pared, cored and thinly sliced
  • 1 cup water
  • 1 Tbsp. cornstarch
  • 2 Tbsp. sugar (or equivalent sugar substitute)
  • 1/8 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1/4 cup brandy or rum
  • 1 quart vanilla ice milk

Directions

  1. Combine apples and water in a saucepan. Mix cornstarch, sugar, cinnamon and nutmeg; stir into apples.

  2. Cook over, medium heat, stirring often, 6 minutes, or until apples are just tender nd sauce is thickened. (If sugar substitute is used, add after apples are cooked.)

  3. Spoon half-cup servings of ice milk into 8 sherbet glasses. Pour apple mixture into chafing dish. Keep warm. Pour brandy or rum over warm apples; ignite. Spoon flaming apples over ice milk; serve immediately.
