Applesauce

One medium apple equals about 1 cup sliced.

Serves 6 people

Ingredients

  • 6 cups peeled, cored and sliced cooking apples
  • 1/2 cup water
  • 1 Tbsp. lemon juice
  • 1/2 cup sugar
  • 1/2 tsp. cinnamon, if desired

Directions

  1. Combine apples, water and lemon juice in 2-quart glass casseroles. Cover with glass lid.

  2. Microwave for 10 to 12 minutes, on high or until apples are tender (about 200 degrees). Stir in remaining ingredients.

  3. Variations:

  4. Substitute 4 cups diced fresh rhubarb for apples and 1/4 cup orange juice for water and lemon juice in basic recipe. Increase sugar to 3/4 cup and substitute nutmeg for cinnamon.

  5. Microwave applesauce as directed in basic recipe. Puree in blender; cool. Beat 2 egg white with 2 Tbsp. sugar until soft peaks form.

  6. Fold into applesauce.

  7. Substitute 1 pint strawberries, washed, hulled and sliced, and 3 cups diced fresh rhubarb for apples in basic recipe. Reduce water to 1/4 cup. Increase sugar to 1 cup and substitute nutmeg for cinnamon.
