Apple Souffle

Ingredients

  • 6 tart medium apples, peeled, cored, and chopped
  • 1 6 oz. can frozen apple juice concentrate, defrosted and undiluted
  • 2 Tbsp. granulated sugar
  • 2 Tbsp. ground cinnamon
  • 8 large egg whites
  • Powdered sugar and cinnamon for garnish

Directions

  1. In medium saucepan combine apples, apple juice concentrate, sugar and cinnamon. Cook over medium heat, stirring until liquid is evaporated and apples are soft, about 9 to 10 minutes. Do not overcook. Cool slightly.

  2. Transfer to food processor fitted with steel blade or to blender and puree. (Small apple bits may still be visible.) Pour into mixing bowl.

  3. Butter bottoms and sides of 8 individual 1 1/4 cup soufflé cups.

  4. In a small mixer bowl whip egg whites until stiff. Fold egg whites into apple cups, piling high in center.

  5. Bake in preheated 450 degrees oven 7 minutes. Reduce heat to 400 degrees and bake additional 7 minutes.

  6. Dust with powdered sugar and dash of cinnamon. Serve immediately.
