Burnt Broccoli

Ingredients

  • 1 bunch broccoli spears
  • 6 garlic cloves, peeled
  • 3 tbsp. olive oil
  • 1/2 tsp kosher salt
  • Pinch of crushed red pepper flakes

Directions

  1. Adjust the oven racks in the bottom and upper third and preheat the oven to 450.

  2. Trim about 1 inch off the ends of the broccoli spears and discard. Slice each broccoli spear lengthwise into 8 pieces total.

  3. Place the broccoli, cut side up, and the garlic cloves on a large rimmed baking sheet and drizzle broccoli with the olive oil. Season both sides with the salt and pepper flakes.

  4. Roast on the bottom rack until the broccoli is browned on the bottom, about 10 minutes. Flip the broccoli and garlic and roast until tender and browned, 10 more minutes.

  5. Turn on the broiler. Put the pan on the higher rack and broil until the broccoli just begins to char and crisp, about 2 minutes. Keep a close eye to make sure you don’t overburn it. Serve immediately.
