Whipped Parmesan Cauliflower Puree

Ingredients

  • 1 medium head cauliflower, cut into florets
  • 3 garlic cloves, peeled
  • 1/4 cup milk
  • 1/3 cup grated Parmesan
  • 1 tbsp. whipped butter
  • 1/2 tsp kosher salt
  • Black pepper
  • 1/4 cup grated Havarti cheese

Directions

  1. Bring a large pot of water to a boil. Add the cauliflower and garlic and boil until the cauliflower is soft, 15-20 minutes. Drain, and return the vegetables to the pot.

  2. Add the milk, Parmesan, butter, salt, and pepper to taste. Puree the mixture right in the pot with an immersion blender until smooth. Stir in the Havarti until it has melted, and serve hot.
