Ingredients

  • 1/2 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 large egg
  • 1/4 cup firmly packed brown sugar
  • 1/2 cup buttermilk
  • 2 Tbsp. melted butter
  • 5 med-size ripe apricots, halved and pitted
  • 10 blackberries, rinsed and drained
  • 2 Tbsp. granulated sugar

Directions

  1. In a bowl, mix cornmeal, flour and baking powder.

  2. In another bowl, beat to blend egg, brown sugar, buttermilk, and butter; stir into dry ingredients until evenly moistened.

  3. Pour batter into a greased 8-inch cake or quiche pan. Gently press apricot halves, pitted-side up, decoratively into dough; put 1 berry in the hollow of each apricot.

  4. Bake in 350 degree oven until kuchen feels firm to touch in center, 30 to 35 minutes; sprinkle with granulated sugar. Cool slightly, then cut into wedges.
