Italian Chicken with White Beans

Ingredients

  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 1/2 cup thinly sliced celery
  • 3 garlic cloves, minced
  • 2 lbs. chicken breasts
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 14.5 oz. can diced tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup dry white wine
  • 1 1/2 tsp dried Italian seasoning, crushed
  • 15 oz. can cannellini beans, rinsed and drained
  • Grated Parmesan

Directions

  1. In a slow cooker, combine onion, carrots, celery, and garlic. Add chicken; sprinkle with salt and pepper. In a medium bowl, stir together undrained tomatoes, broth, wine and Italian seasoning. Pour over all in cooker.

  2. Cover and cook on LOW for 6-7 hours. Turn off slow cooker. Stir beans into cooker. Let stand, covered, for 10 minutes.

  3. Using a slotted spoon, transfer chicken and vegetables to a serving dish, reserving cooking liquid. Drizzle chicken and vegetables with enough of the reserved liquid to moisten. Sprinkle each serving with Parmesan.
