Mushroom-Stuffed Cheeseburgers

Ingredients

  • 2 eggs
  • 3/4 cup soft bread crumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup ketchup
  • 1/2 tsp salt
  • 1 1/2 lb. ground beef
  • 4 oz. can mushroom stems and pieces, drained and coarsely chopped
  • 6 slices American cheese
  • 6 hamburger buns, split and toasted
  • 6 slices tomato
  • 6 slices red onion

Directions

  1. In a large bowl, beat eggs with a fork. Stir in bread crumbs, onion, the 1/4 cup ketchup, and the salt. Add beef; mix well. Form into patties.

  2. Divide mushrooms among centers of half of the patties, leaving a border of meat. Top with remaining patties; seal edges.

  3. Grill burgers on the rack of an uncovered grill over medium for 14-18 minutes, turning once. Top burgers with cheese; grill just until melted.

  4. Serve burgers on buns with tomato, red onion and other condiments.
