Apricot and Lemon Steak

Ingredients

  • 1 cup dried apricots
  • water
  • 1 tsp. sugar
  • 2 1/2 lb. steak
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • Flour Butter
  • 1 tsp. lemon juice
  • 1 tsp. lemon rind
  • 2 tsp. finely chopped onion
  • 1/2 cup apricot juice

Directions

  1. Soak apricots in water overnight. cook with sugar in small amount of water until soft and puffy. Drain water and reserve.

  2. Rub steak with salt, pepper and flour; pound into meat. Brown steak in butter on both sides. Put into heavy skillet; cover with apricots, lemon juice, lemon rind, onion, 1 cup water and apricot juice. Cover skillet tightly; simmer for 1 hour.
