Mustard-Rosemary Grilled Lamb

Ingredients

  • 8 lamb rib or loin chops
  • 1/4 cup stone ground mustard
  • 2 green onions, thinly sliced
  • 2 tbsp. dry white wine
  • 1 tbsp. balsamic vinegar
  • 3 garlic cloves, minced
  • 1 tsp snipped fresh rosemary
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  1. Trim fat from chops. In a small bowl, stir together mustard, green onions, wine, vinegar, garlic, rosemary, honey, salt, and pepper. Spread mixture evenly onto both sides of each chop. Place chops on a large plate; cover loosely with plastic wrap. Chill in the fridge for at least 2 hours or up to 3 hours.

  2. Grill chops on the rack on an uncovered grill directly over medium, 12-15 minutes.
