Roasted Garlic Mayonnaise

Ingredients

  • 1 medium garlic head
  • 2 tsp olive oil
  • 1/2 cup mayo

Directions

  1. Preheat oven to 325. Peel away outer skin from garlic. Cut off the pointed top portion with a knife, leaving the bulb intact but exposing the individual cloves. Place in a small baking dish; drizzle with 2 tsp olive oil. Cover and bake for 45-60 minutes or until cloves are very soft. Cool slightly. Press to remove garlic “paste” from individual cloves. Mash garlic with tines of a fork. Stir together mashed garlic and mayo. Cover and chill for at least 3 hours or up to 8 hours.
